  3. Cover a baking sheet with parchment paper and place the sliced vegetables on it. Roast for about 20 minutes or until soft and slightly browned.
  4. While the vegetables are roasting, heat a pan over medium heat and add diced onions. Cook for about 3 minutes or until translucent. Add minced garlic and cook for another 3 minutes. Add diced tomatoes and lentils. Season with cinnamon, oregano, nutmeg, and allspice. Cook for about 10 minutes or until the sauce thickens.
  5. Grease a casserole dish with olive oil and sprinkle the bottom with breadcrumbs. Place a layer of roasted eggplant slices, followed by a layer of roasted zucchinis slices, and then a layer of lentil tomato sauce. Repeat layers until all ingredients are used up.
  6. Bake for about 20 minutes or until the top is golden brown and crisp.
  7. Allow to cool for 5 minutes before serving. Garnish with fresh parsley or cilantro.
