Tzatziki

  • 1 cup grated cucumber
  • 1 cup plain Greek yogurt
  • 1 tablespoon fresh chopped dill
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Combine all ingredients in a bowl and mix well. Chill in the refrigerator for at least an hour before serving.

Moussaka

  • 2 eggplants, sliced
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 (14.5 oz) can diced tomatoes
  • 1 tablespoon tomato paste
  • 1/2 cup red wine
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup bread crumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preheat oven to 375°F. Brush the eggplant slices with olive oil and grill or bake until tender. Heat olive oil in a skillet and add ground beef, onion, and garlic. Cook until browned, then add cinnamon, nutmeg, salt, and pepper. Add diced tomatoes, tomato paste, and red wine. Simmer for 10 minutes. Grease a baking dish and layer the eggplant slices with the beef mixture. Top with grated Parmesan cheese and bread crumbs. Bake for 35-40 minutes, or until golden brown.

Souvlaki

  • 1/4 cup olive oil

  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Combine all ingredients in a bowl and stir until chicken is coated. Marinate for at least 30 minutes in the refrigerator. Thread chicken onto skewers and grill for 6-8 minutes on each side, or until fully cooked.
