Delectable Dolmades: A Vegan Spin on a Greek Classic

– Salt and pepper to taste
– 1 jar of grape leaves
– 1/4 cup lemon juice
– 1/4 cup olive oil


1. Cook the quinoa according to package directions.
2. In a large sauté pan, heat a tablespoon of olive oil over medium heat. Add the onion and garlic and cook until the onion is soft and translucent.
3. Add the red pepper and zucchini and continue cooking until the vegetables are tender.
4. Add the cooked quinoa, parsley, dill, and mint to the vegetable mixture. Add salt and pepper to taste.
5. Rinse the grape leaves and remove any stems. Place the leaves in a shallow bowl of warm water for a few minutes to soften them.
6. Take one leaf and place it flat on a cutting board or work surface. Spoon about a tablespoon of the quinoa mixture onto the bottom third of the leaf.
7. Fold the sides of the leaf inward and then roll up tightly from the bottom to the top, creating a cigar shape. Repeat with the remaining leaves and filling.
8. Place the dolmades in a pot or a pan, seam-side down. Add enough water to cover the dolmades by about an inch.
9. Add the lemon juice and olive oil to the pot and bring to a simmer over medium heat.
10. Cover the pot and simmer for about 45 minutes or until the dolmades are tender.
11. Remove from heat and let cool before serving.
