  3. Add the cooked lentils and continue to cook for another 5 minutes, then add tomato paste and crushed tomatoes, stirring to incorporate.
  4. Season with oregano, basil, cinnamon, salt, and pepper. Reduce heat and let simmer for 15 minutes while stirring occasionally.
  5. In a separate pan, lightly fry the sliced eggplants and potatoes in olive oil until golden brown.
  6. Remove from heat and set aside.
  7. Next, prepare the vegan bechamel sauce. In a saucepan, melt vegan butter over medium heat, then add flour and stir continuously until a smooth mixture forms.
