  • 1 pound fresh green beans, trimmed and cut into 2-inch pieces
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 can (14oz) of diced tomatoes
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


  1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic and cook until the onions are soft and translucent, about 5 minutes.
  2. Add the potatoes and carrots and cook for another 5 minutes.
  3. Add the green beans, diced tomatoes, oregano, thyme, salt and pepper.
  4. Stir everything together and bring to a simmer. Cover the pot and let it cook for about 40 minutes or until the vegetables are tender.
  5. Once the fasolakia is cooked, remove the pot from the heat and let it rest for at least 10 minutes. Serve hot with some crusty bread or your favorite grain.
