Steps

  1. In a large bowl, combine the tomatoes, cucumber, onion, bell pepper, olives, and feta cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Refrigerate for at least 30 minutes before serving.

  • 1 pound ground beef

  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups milk
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten

Steps

  1. Preheat the oven to 375°F.
  2. In a large skillet, brown the ground beef with the onion and garlic over medium-high heat.
  3. Add the tomato sauce, red wine, oregano, salt, and black pepper. Reduce the heat and simmer for 15 minutes.
  4. In another skillet, sauté the eggplant slices in olive oil until lightly browned.
  5. In a saucepan, melt the butter over low heat. Stir in the flour to make a roux.
  6. Gradually whisk in the milk and nutmeg. Cook, stirring constantly, until thickened.
  7. Remove from heat and stir in the Parmesan cheese and beaten egg.
  8. In a 9×13-inch baking dish, layer the eggplant slices and ground beef mixture, alternating until all ingredients are used up.
  9. Pour the sauce over the top of the moussaka and smooth out with a spatula.
  10. Bake for 45 minutes or until the top is golden brown and bubbly.
