  • 2 large eggplants, sliced lengthways into ½ inch-thick pieces

  • 1 teaspoon dried basil
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon tomato paste
  • 1 heaped tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 ½ cups soy milk
  • Salt and pepper to taste
  • Vegan cheese for topping (optional)


  1. Preheat the oven to 400°F (200°C). Brush the eggplant slices with olive oil and arrange them in a single layer on a baking sheet. Bake for 20 to 25 minutes, or until tender and golden. Set aside to cool.
  2. Heat the remaining olive oil in a saucepan over medium heat. Add the onion and garlic and sauté for 2-3 minutes until softened. Add the bell pepper and zucchini and continue to sauté for another 2-3 minutes until the vegetables are tender.
  3. Add the oregano, basil, diced tomatoes, and tomato paste to the pan. Mix well and let the mixture simmer for a few minutes.
  4. Sprinkle the flour and cinnamon over the vegetable mixture and stir well. Gradually pour in the soy milk, whisking constantly to prevent lumps from forming. Bring to a boil, then reduce the heat and let the sauce simmer until it thickens, which should take about 10-15 minutes. Add salt and pepper to taste.
  5. Arrange a layer of the cooked eggplant slices in the bottom of a large ovenproof dish. Spoon the vegetable and sauce mixture over the eggplant. Repeat the layers, finishing with a final layer of eggplant on top.
  6. If using, sprinkle vegan cheese over the top. Bake the moussaka for 30 to 35 minutes, or until the cheese has melted and the dish is heated through.
  7. Serve hot and enjoy!
