  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon salt

  • 4 garlic cloves, minced
  • 1/4 cup extra-virgin olive oil
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1/2 cup kalamata olives, pitted

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together lemon juice, oregano, salt, pepper, garlic, and olive oil.

  4. Add cherry tomatoes, red onion, and kalamata olives to the baking dish around the chicken.
  5. Bake for 30-35 minutes, or until chicken is cooked through (registering 165°F/74°C on a meat thermometer).
