Vegan Moussaka Recipe
- 2 large eggplants
- 1 onion, diced
- 3 garlic cloves, minced
- 2 cups chopped mushrooms
- 1 cup cooked lentils
- 1 can crushed tomatoes
- 1 tsp. dried oregano
- 1 tsp. dried basil
- Salt and pepper to taste
- 1 tbsp. olive oil
- 1 tbsp. flour
- 1 cup unsweetened soy milk
- 1/4 cup nutritional yeast
- Preheat oven to 375°F (190°C).
- Peel and slice eggplants into thin rounds. Place on a baking sheet and sprinkle salt on both sides. Let it sit for 20 minutes to release excess moisture. After 20 minutes, rinse and pat dry.
- Heat oil in a large pan over medium heat. Add onions and garlic and cook until fragrant. Add mushrooms and cook until soft and golden brown. Add cooked lentils and crushed tomatoes. Add oregano and basil. Simmer for about 15 minutes. Salt and pepper to taste.
- To make the béchamel sauce, place flour in a small saucepan and slowly whisk in soy milk. Cook over low heat, stirring constantly until the sauce thickens. Add nutritional yeast and mix well.
- Grease a baking dish and layer the eggplant slices on the bottom. Spoon the lentil and mushroom mixture over the eggplant. Repeat layers until all ingredients are used up. Cover the dish with the béchamel sauce.
- Bake for 35-45 minutes until golden brown on top.
