  • 2 large eggplants

  1. Preheat oven to 375°F (190°C).
  2. Peel and slice eggplants into thin rounds. Place on a baking sheet and sprinkle salt on both sides. Let it sit for 20 minutes to release excess moisture. After 20 minutes, rinse and pat dry.
  3. Heat oil in a large pan over medium heat. Add onions and garlic and cook until fragrant. Add mushrooms and cook until soft and golden brown. Add cooked lentils and crushed tomatoes. Add oregano and basil. Simmer for about 15 minutes. Salt and pepper to taste.
