- 1 lb boneless, skinless chicken breasts
- 1/4 cup olive oil
- 3 garlic cloves, minced
- 3 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 large cucumber, peeled and diced
- 1 large red onion, peeled and diced
- 1/2 cup crumbled feta cheese
- 1/3 cup pitted kalamata olives, chopped
- 4 pita breads, cut into triangles
- 1 tbsp olive oil
- 1/2 tsp dried oregano
- Salt and pepper to taste
- In a large bowl, whisk together olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper. Add chicken and toss to coat. Cover the bowl and marinate in the refrigerator for at least 30 minutes.
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
