Ingredients:

  • 2 medium eggplants, sliced
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp paprika
  • 1 can chickpeas, drained and rinsed
  • 1 cup cooked lentils
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 3 tbsp nutritional yeast
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Vegan cheese, shredded (optional)

Instructions:

  1. Preheat oven to 375°F/190°C. Grease a 9×13-inch baking dish with olive oil.
  2. Place the sliced eggplants on a baking sheet and brush them evenly with olive oil.
  3. Bake the eggplant slices for 20 to 25 minutes or until they are slightly browned and softened.
  4. Meanwhile, in a large skillet, sauté the onion, garlic, red and green bell peppers, and tomato paste for 5 minutes until they are softened.
  5. Add the dried oregano, basil, and paprika and stir until fragrant.
  6. Drain and rinse the chickpeas and add them to the skillet, along with the cooked lentils, diced tomatoes, and vegetable broth.
  7. Simmer for 10 minutes until the sauce thickens and reduces slightly.
  8. In a small bowl, whisk together the nutritional yeast, cornstarch, lemon juice, salt, and pepper to make a thick and creamy sauce.
  9. Add the sauce to the skillet and stir until it is well incorporated.
  10. Place one layer of baked eggplant slices at the bottom of the prepared baking dish.
  11. Add a layer of the vegetable and bean sauce on top of the eggplant slices.
  12. Add another layer of eggplant slices and continue layering until all the ingredients are used up, ending with a layer of the vegetable sauce on top.
  13. Sprinkle the shredded vegan cheese (if using) on top of the moussaka.
  14. Bake the moussaka for 25 to 30 minutes or until it is bubbling and the cheese has melted (if using).
  15. Remove the moussaka from the oven and let it cool for a few minutes before slicing and serving.
