  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can chickpeas, drained and rinsed

  1. Rinse quinoa well in a fine-mesh strainer and transfer to a small saucepan with vegetable broth. Bring to a boil over high heat then reduce heat to low. Cover and cook until liquid is absorbed and quinoa is tender, about 15 minutes.
  2. In a large bowl, combine cooked quinoa, chickpeas, tomatoes, red onion, olives, parsley, and mint.
  3. In a separate small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper. Drizzle over quinoa mixture and toss gently to combine.
