Ingredients:
- 4-6 bone-in, skin-on chicken thighs
- 2 cups cherry tomatoes, halved
- 1/2 cup pitted Kalamata olives
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 1/4 cup freshly squeezed lemon juice
- 4 cloves garlic, minced
- 1 tsp. dried oregano
- 1 tsp. salt
- 1/2 tsp. black pepper
Instructions:
- Preheat your oven to 375F.
- In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.
- Add in the chicken thighs and toss to coat them with the marinade.
- Arrange the chicken in a 9×13 inch baking dish, skin side up.
- Pour any remaining marinade over the chicken.
- Add the cherry tomatoes and olives to the dish, distributing them evenly around the chicken.
- Bake for 40-45 minutes, until the chicken is cooked through and the skin is crispy and golden brown.
- Sprinkle crumbled feta cheese and chopped parsley over the top of the chicken before serving.
