  • 1 tbsp olive oil

  • 10 oz. fresh spinach, washed and chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 block firm tofu, crumbled
  • 1/2 cup nutritional yeast
  • 1/2 cup unsweetened almond milk
  • 1 tbsp cornstarch
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 store-bought vegan pie crust


1Preheat the oven to 375°F
2Heat the olive oil in a large pan over medium-high heat. Add the onion and garlic and cook for 2-3 minutes until fragrant.
3Add the chopped spinach, salt, pepper, oregano, basil, and thyme. Cook until the spinach is wilted, about 5-7 minutes.
4In a separate bowl, mix together the crumbled tofu, nutritional yeast, almond milk, and cornstarch. Add the tofu mixture to the pan with the spinach and stir until well combined.
5Stir in the fresh dill, parsley, and mint and cook for an additional 2-3 minutes until heated through.
6Spread the vegan pie crust in a 9-inch pie dish. Pour the spinach and tofu mixture over the crust.
7Bake for 35-40 minutes until the crust is golden brown and the filling is set.
8Remove from the oven and let cool for 5-10 minutes before serving.
