  • 1 large eggplant
  • 1 large zucchini
  • 1 red pepper
  • 1 yellow pepper
  • 1 red onion
  • 1/4 cup of olive oil
  • Salt and pepper to taste


  1. Preheat oven to 425°F (220°C).
  2. Cut the eggplant, zucchini, peppers, and onion into chunks and spread them out on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Bake for 20-25 minutes or until the vegetables are cooked through and slightly browned.
  5. While the vegetables are baking, make the dressing by combining the following ingredients in a small bowl:
    • 3 tablespoons of olive oil
    • 1 tablespoon of red wine vinegar
    • 1 teaspoon of dried oregano
    • 1 teaspoon of garlic powder
    • Salt and pepper to taste
  6. Remove the vegetables from the oven and let them cool for a few minutes.
  7. Drizzle the dressing over the top of the veggies and toss to coat.
  8. Serve warm and enjoy!
