- 2 lbs chicken breasts, cut into strips
- 2 tbsp olive oil
- 1 red onion, sliced
- 4 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1/2 cup kalamata olives
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh oregano, chopped
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- In a large skillet, heat the olive oil over medium-high heat.
- Season the chicken strips with salt and pepper and add them to the skillet. Cook until golden brown and set aside.
- Add the onion, garlic, red and green bell peppers, zucchini, and yellow squash to the skillet. Sauté until tender.
- Transfer the sautéed vegetables to a baking dish and add the cooked chicken, olives, and crumbled feta cheese on top.
- Sprinkle the chopped parsley and oregano over the dish.
- Drizzle the lemon juice on top and bake in the oven for 25 minutes.
