Greek ⁤Lamb Souvlaki

Ingredients:

  • 1 ⁢lb. lamb loin, cut into cubes
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 cloves garlic, minced
  • 1 tbsp⁣ dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 red onion, cut into wedges
  • 1 green bell pepper, seeded and cut into pieces
  • 1 yellow bell pepper, seeded and cut into pieces
  • 8 skewers, soaked in water for at least 30 minutes

Instructions:

  1. In a large bowl, combine the olive oil, red wine vinegar,​ garlic, oregano, ‌salt, and black pepper. Mix well.
  2. Add the‌ lamb cubes ‍to the ‍bowl and toss ‍them in the marinade ⁢until coated. Cover​ the bowl with plastic wrap and refrigerate‌ for at least 2 hours.
  3. Preheat⁢ the grill to medium-high heat.
  4. Thread the lamb cubes, ​onion wedges, and bell pepper pieces onto the skewers, alternating ⁢between them.
  5. Grill the souvlaki skewers for 15-18 minutes, turning them occasionally, until the lamb is cooked through and slightly charred on the outside.
  6. Remove the skewers⁤ from the⁤ grill​ and let them rest for 5 minutes before serving.
