Ingredients:

  • 1 lb lamb chops
  • 2 cups Greek yogurt
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1/2 cup Kalamata olives, pitted and chopped
  • 2 tbsp fresh oregano, chopped
  • 1/2 cup red onion, diced
  • 1/2 cup cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 400°F.
  2. Season lamb chops with salt and pepper on both sides. Place on a baking sheet and bake for 20-25 minutes until cooked through.
  3. In a small bowl, mix together Greek yogurt, crumbled feta cheese, minced garlic, chopped Kalamata olives, and fresh oregano. Season with salt and pepper to taste.
