Instructions
- Start by rinsing the vine leaves. If you’re using fresh leaves, blanch them in boiling water for 2-3 minutes.For jarred leaves, rinse them under cold water to remove brine.
- In a large pan, heat a quarter cup of olive oil. Add chopped onion, garlic and pine nuts and sauté until they are lightly golden.
- stir in the rice, parsley, mint, dill, lemon juice, lemon zest, salt, and pepper. Continue to cook for 5 minutes, than remove from heat.
- Lay a vine leaf flat and add a spoonful of the rice mixture to the center. Fold the sides towards the middle and roll the leaf into a tight cylinder.
- Place the dolmades seam side down in a large pan, fitting them snuggly together in a single layer. Drizzle the remaining olive oil over the top.
- Add enough water to the pan to just cover the dolmades. Cover the pan and simmer for about 50 minutes.
- The dolmades are ready when the leaves are tender and the filling is cooked. Serve them hot or cold as per your preference.
