  • 1 zucchini, cut into 1-inch pieces
  • 8-10 wooden skewers, soaked in water for 30 minutes

Directions

  1. In a mixing bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic, oregano, basil, salt, and black pepper to make the marinade.
  2. Add the tofu, onion, bell peppers, and zucchini to the marinade and toss to coat well. Cover and refrigerate for at least 2 hours or overnight, stirring occasionally.
  3. Preheat grill to medium-high heat.
  4. Thread the marinated tofu and vegetables onto the skewers in any order you like.
  5. Grill the skewers for 12 to 15 minutes, turning occasionally, until the vegetables are tender and the tofu is lightly charred on all sides.
