Ingredients:
- 2 medium eggplants, sliced
- 2 tbsp olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp paprika
- 1 can chickpeas, drained and rinsed
- 1 cup cooked lentils
- 1 can diced tomatoes
- 2 cups vegetable broth
- 3 tbsp nutritional yeast
- 1 tbsp cornstarch
- 1 tsp lemon juice
- Salt and pepper to taste
- Vegan cheese, shredded (optional)
Instructions:
- Preheat oven to 375°F/190°C. Grease a 9×13-inch baking dish with olive oil.
- Place the sliced eggplants on a baking sheet and brush them evenly with olive oil.
- Bake the eggplant slices for 20 to 25 minutes or until they are slightly browned and softened.
- Meanwhile, in a large skillet, sauté the onion, garlic, red and green bell peppers, and tomato paste for 5 minutes until they are softened.
- Add the dried oregano, basil, and paprika and stir until fragrant.
- Drain and rinse the chickpeas and add them to the skillet, along with the cooked lentils, diced tomatoes, and vegetable broth.
- Simmer for 10 minutes until the sauce thickens and reduces slightly.
- In a small bowl, whisk together the nutritional yeast, cornstarch, lemon juice, salt, and pepper to make a thick and creamy sauce.
- Add the sauce to the skillet and stir until it is well incorporated.
- Place one layer of baked eggplant slices at the bottom of the prepared baking dish.
- Add a layer of the vegetable and bean sauce on top of the eggplant slices.
- Add another layer of eggplant slices and continue layering until all the ingredients are used up, ending with a layer of the vegetable sauce on top.
