Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 red bell pepper, seeded and sliced
  • 1 yellow bell pepper, seeded and sliced
  • 1 large onion, sliced
  • 1 cup cherry tomatoes
  • 1/2 cup kalamata olives, pitted
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F.
  2. In a large bowl, whisk together olive oil, garlic, oregano, basil, thyme, salt, and black pepper.
  3. Add chicken, bell peppers, onion, cherry tomatoes, and olives to the bowl and toss to coat evenly.
  4. Transfer everything to a baking dish and bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  5. Remove from oven and serve hot, garnished with fresh parsley and a drizzle of lemon juice if desired.
