What you’ll need:
- 4 fresh Roma tomatoes or 1 can of tomatoes
- 4 eggs
- 100g feta cheese
- 2 tablespoons olive oil
- 1 medium sized onion
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a pan over medium heat.
- Add the onions and garlic to the pan and sauté untill thay become soft and translucent.
- add the tomatoes to the pan and simmer until the tomatoes break down and release their juice.

- Crumbled the feta cheese over the egg mixture and stir until it’s completely melted.
- Season the dish with salt and pepper to taste.
