  • 3/4 cup vegetable ‍broth
  • 1/4 cup chopped fresh ‍parsley
  • 1/4 cup chopped ⁣fresh basil
  • 1/4 cup nutritional yeast
  • 1 cup vegan parmesan cheese, shredded (optional)


  1. Preheat your oven to ⁢375 degrees ‍F.
  2. Lay the eggplant slices on ‌a‍ baking sheet lined with‍ parchment ⁢paper and brush them with 1 tablespoon of olive oil. Roast in the oven ⁢for 15-20 minutes or⁢ until tender and slightly browned. Set aside.
