Spanakopita

Spanakopita is a traditional Greek dish that features spinach and feta cheese layered in crispy phyllo dough. This savory pie is perfect for appetizers, snacks, or even as part of a meal. With this recipe, you can make your own spanakopita from scratch and enjoy its delicious flavors at home.

Ingredients:

  • 1 lb. fresh spinach, washed and trimmed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 12 sheets phyllo dough, thawed
  • 1/4 cup olive oil

Directions:

  1. Preheat the oven to 375°F.
  2. Bring a large pot of water to a boil. Add the spinach and cook for 2-3 minutes, or until wilted. Drain and rinse the spinach under cold water. Squeeze out as much water as possible and chop the spinach.
  3. In a large bowl, combine the spinach, feta cheese, green onions, garlic, parsley, salt, and pepper.
  4. On a parchment-lined baking sheet, lay down one sheet of phyllo dough. Brush the sheet with olive oil. Repeat with 6 more sheets, brushing each with olive oil.
  5. Spread the spinach mixture over the layered phyllo dough, leaving a 1-inch border around the edges.
  6. Layer the remaining 5 sheets of phyllo dough, brushing each with olive oil.
  7. Fold the edges of the bottom layer of phyllo dough over the spinach filling and brush with olive oil.
  8. Bake the spanakopita for 35-40 minutes, or until golden brown. Allow to cool for a few minutes before slicing and serving.
