Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1/2 red onion, chopped
  • 1/2 cup kalamata olives, pitted and chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/2 teaspoon dried​ oregano

Instructions:

  1. Rinse the quinoa in cold⁣ water and⁣ drain.
  2. In a medium saucepan, bring the water, quinoa, 1/4 teaspoon salt​ and a dash of black​ pepper⁣ to boil. Cover the pan and reduce the heat to low. Cook for ⁤15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with fork.
  3. In a large bowl,‍ whisk together the olive oil, red wine vinegar, garlic, 1/4 teaspoon of salt, ‌and a dash of black‍ pepper.
  4. Add the quinoa to the bowl and mix to combine.
  5. Add the bell pepper, onion, olives,⁣ feta, parsley, mint⁤ and oregano. Toss gently to combine. Season with additional‍ salt ‌and ‍pepper ‍to taste.
  6. Refrigerate for⁢ 30 minutes or longer to allow flavors to mingle before serving.
