This spinach and feta pie​ recipe is easy⁣ to make and perfect for a cozy ⁤night in or ​to impress your ‌dinner guests. So, let’s get cooking!

Ingredients

  • 1 pound spinach, washed and chopped
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup nutritional yeast
  • 1 block ⁣firm⁤ tofu, drained and crumbled
  • 1/2 cup ⁢unsweetened almond ​milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1⁤ cup⁢ vegan feta cheese, crumbled
  • 1/2 cup sliced black ⁣olives
  • 1/4⁢ cup chopped fresh‍ dill
  • 12​ sheets⁢ phyllo dough, thawed and at room ​temperature
  • 1/4 cup olive ‌oil

Instructions

  1. Preheat oven to 375°F.
  2. Heat olive ‍oil ⁤in a large ‍skillet over medium heat. Add onion and garlic and cook until softened, about 5 ​minutes.
  3. Add chopped spinach and cook until wilted, about 3-5 minutes. ⁢Set aside to cool.
  4. In a mixing‌ bowl, combine the ​crumbled tofu, nutritional​ yeast, ‌almond‍ milk, salt, black pepper, and lemon juice.
  5. Add ‌the cooled spinach mixture to⁢ the⁢ tofu ‍mixture and stir to ⁤combine.
  6. Add vegan feta cheese, black olives, and‌ fresh dill to⁤ the mixture and stir again.
  7. Brush a 9-inch pie dish with olive oil.
  8. Place one sheet of phyllo dough⁤ on the bottom of the⁢ dish, letting the edges hang over​ the sides. Brush with‍ olive oil.
  9. Repeat with six more sheets of ‌phyllo dough, brushing each layer with olive ⁤oil.
  10. Add the filling to ‍the dish, spreading it evenly.
  11. Take the overhanging edges of ‌the phyllo​ dough and fold them over the ‌filling to cover the top, brushing‍ each layer with olive oil.
  12. Bake for 45-50 minutes or until the top is golden brown.
  13. Serve​ hot and ​enjoy your delicious vegan Spanakopita!
