  • 1 lb. boneless, skinless chicken breasts
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tbsp. dried oregano
  • 1 tsp. dried thyme
  • 1 tsp. ground coriander
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped kalamata olives
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup chopped tomato
  • Pita bread or rice, for serving


  1. In a large bowl, whisk together the Greek yogurt, garlic, lemon juice and zest, oregano, thyme, coriander, salt, and black pepper.
  2. Add the chicken breasts to the bowl and toss to coat. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat a grill or grill pan to medium-high heat. Remove the chicken from the marinade and discard the remaining marinade.
  4. Grill the chicken for 5-7 minutes per side, or until cooked through and no longer pink in the center.
  5. Let the chicken rest for 5 minutes, then slice into thin strips or cubes.
  6. In a small bowl, mix together the feta cheese, parsley, mint, kalamata olives, cucumber, red onion, and tomato.
  7. Arrange the sliced or cubed chicken on a platter and top with the feta cheese mixture.
  8. Serve with warm pita bread or rice.
