  • 1 pound chicken breast

  • 2 tablespoons lemon juice

  1. Preheat oven to 400°F.

  3. Season chicken breasts with the spice mixture.
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-6 minutes per side, until browned and cooked through. Remove chicken from skillet and set aside.
  5. Add the onion and bell peppers to the same skillet and cook for 5-7 minutes, stirring occasionally, until they start to soften.
  6. Add the olives and parsley to the skillet and stir to combine.
  7. Return the chicken to the skillet and pour lemon juice over everything.
  8. Top with crumbled feta cheese and place the skillet in the preheated oven.
  9. Bake for 12-15 minutes, until everything is heated through and the feta is lightly browned.
  10. Remove from oven and serve immediately.
