Lamb Gyros with Tzatziki Sauce

Lamb Gyros

Serves: 4

Ingredients:

  • 1 lb. lamb, sliced thin
  • 1 red onion, sliced thin
  • 1 tomato, sliced thin
  • 4 pita breads
  • 1 cup plain Greek yogurt
  • 1 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tbsp. lemon juice
  • 4 oz. feta cheese, crumbled
  • 1 tbsp. dried oregano
  • 2 tbsp. olive oil
  • Salt and pepper, to taste

Directions:

  1. Preheat your oven to 400°F.
  2. Season the lamb with salt, pepper, and oregano and set aside.
  3. In a bowl, mix together the Greek yogurt, grated cucumber, garlic, lemon juice, and salt and pepper to make the tzatziki sauce.
  4. Heat the olive oil in a large skillet over medium-high heat. Add the lamb and cook for about 10 minutes, or until it’s browned on all sides.
  5. Warm the pita breads in the oven for about 5 minutes.
  6. To assemble, place a few slices of lamb, tomato, and red onion on each warmed pita. Top with a spoonful of tzatziki sauce and crumbled feta cheese.
