Lamb Gyros with Tzatziki Sauce
- 1 lb. lamb, sliced thin
- 1 red onion, sliced thin
- 1 tomato, sliced thin
- 4 pita breads
- 1 cup plain Greek yogurt
- 1 cucumber, grated
- 2 cloves garlic, minced
- 1 tbsp. lemon juice
- 4 oz. feta cheese, crumbled
- 1 tbsp. dried oregano
- 2 tbsp. olive oil
- Salt and pepper, to taste
- Preheat your oven to 400°F.
- Season the lamb with salt, pepper, and oregano and set aside.
- In a bowl, mix together the Greek yogurt, grated cucumber, garlic, lemon juice, and salt and pepper to make the tzatziki sauce.
- Heat the olive oil in a large skillet over medium-high heat. Add the lamb and cook for about 10 minutes, or until it’s browned on all sides.
- Warm the pita breads in the oven for about 5 minutes.
- To assemble, place a few slices of lamb, tomato, and red onion on each warmed pita. Top with a spoonful of tzatziki sauce and crumbled feta cheese.
