Instructions
- Preheat oven to 400 degrees F.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté until softened, about 5 minutes.
- Add spinach and cook until wilted, stirring occasionally, about 5 minutes.
- Remove from heat and stir in vegan feta, dill, parsley, salt, and pepper.
- On a lightly floured surface, roll out puff pastry to desired thickness. Cut into two equal pieces.
- Place one piece of puff pastry on a baking sheet lined with parchment paper.
- Spoon spinach mixture onto the puff pastry, leaving a 1-inch border around the edges.
- Place the other piece of puff pastry on top of the spinach mixture and crimp the edges to seal.
- Cut a few slits in the top of the pastry to allow steam to escape.
- Bake for 25 to 30 minutes, or until the pastry is golden brown.
- Let cool for a few minutes before slicing and serving.
