  • 2 pounds chicken breast, cut into cubes
  • 1 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons lemon juice


  1. Preheat your oven to 375F.
  2. Add the chicken cubes, chopped onion, red and yellow bell peppers, garlic, and olives to a large bowl. Drizzle olive oil over the top and toss everything together until well coated in oil.
  3. Add the oregano, basil, salt, and pepper to the bowl and toss everything together again until well coated in herbs and spices.
  4. Transfer the mixture to a baking dish and spread it out so that it’s in an even layer.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Sprinkle the crumbled feta cheese over the top of the dish, followed by the lemon juice.
  7. Return the baking dish to the oven and bake for an additional 5-10 minutes, or until the cheese is lightly browned and bubbly.
  8. Remove from the oven and let cool for a few minutes before serving.
