Ingredients

1 cup uncooked quinoa
2 cups water
1 can chickpeas, drained and rinsed
1 medium red bell pepper,⁢ diced
1 medium yellow bell pepper, diced
1 medium red​ onion, diced
1 cup cherry tomatoes, halved
1/2 ⁣cup Kalamata olives, pitted and sliced
1/4 cup feta cheese, crumbled
1/4 cup fresh‌ parsley, chopped
1/4 ‍cup fresh‌ lemon juice
1/4 cup extra-virgin olive oil
1/2 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp crushed‌ red pepper flakes
to taste salt and black pepper

Instructions

  1. Rinse the quinoa well and ‍put it in⁢ a‌ medium saucepan with the water. Bring to a⁢ boil, reduce heat to‍ low, cover, and simmer for 15-20 ‌minutes or until all the water has been absorbed. Fluff with a fork ⁣and let⁤ cool.
  2. In ‍a large bowl, combine the cooked quinoa, chickpeas, bell ⁤peppers, onion, tomatoes, olives, and feta‌ cheese.
  3. In a small bowl, ⁢whisk together the‍ lemon juice, olive​ oil, cumin,⁤ paprika, red pepper flakes, salt, and black pepper.
  4. Pour the dressing over the salad and toss to‌ coat evenly. Top‌ with chopped parsley.
  5. Refrigerate for at⁤ least​ 30 minutes before serving to allow the flavors to meld.
