  • 1 pound of spinach, washed and chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1/4 cup of olive oil
  • 1 cup of crumbled tofu
  • 1/2 cup of nutritional yeast
  • 2 tablespoons of lemon juice
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 package of phyllo pastry
  • 1/2 cup of melted vegan butter


  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, sauté the onion and garlic in olive oil until soft and fragrant.
  3. Add the spinach to the skillet and cook until wilted.
  4. Remove the skillet from the heat and stir in the crumbled tofu, nutritional yeast, lemon juice, salt, and black pepper.
  5. Brush a baking dish with some of the melted vegan butter.
