If you’re a fan of Greek cuisine, you’ve probably tasted moussaka before. The traditional recipe is made with meat, but we’ve got a vegan version that’s just as delicious! Our moussaka is made with layers of hearty veggies and a creamy bechamel sauce. Give it a try today!

Ingredients:

  • 2 eggplants, sliced thinly
  • 2 zucchinis, sliced thinly
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 can of chopped tomatoes
  • 1 tsp. of dried oregano
  • 1 tsp. of dried thyme
  • 1 tsp. of paprika
  • 1/2 tsp. of ground cinnamon
  • 1/2 tsp. of ground nutmeg
  • 1/3 cup of olive oil
  • 2 tbsp. of flour
  • 2 cups of almond milk
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat up some olive oil over medium heat. Add the onion and garlic and cook until the onions are soft and translucent.
  3. Add the can of chopped tomatoes and spices (oregano, thyme, paprika, cinnamon, and nutmeg) to the skillet. Stir well and let the mixture simmer for 10 minutes.
  4. Add the eggplants and zucchinis to the skillet and mix well with the tomato sauce. Continue to cook for another 10 minutes.
  5. In a separate saucepan, heat up some olive oil over medium heat. Add the flour and whisk well. Slowly add the almond milk, whisking constantly to prevent any lumps from forming. Continue to cook the mixture, whisking constantly, until it thickens and becomes a smooth bechamel sauce.
  6. Season the bechamel sauce with salt and pepper to taste.
  7. In a large baking dish, layer the eggplant and zucchini mixture on the bottom. Pour the bechamel sauce on top of the veggies.
  8. Bake the moussaka in the preheated oven for 35-40 minutes, or until the top is golden and the veggies are tender.
  9. Let the moussaka cool for a few minutes before serving.
