  • 8 oz. feta cheese, crumbled
  • 1/2 cup unsalted butter, melted
  • 12 sheets phyllo pastry

Preheat oven to 375°F. In a large skillet, sauté the onion and garlic in olive oil until tender, about 5 minutes. Add the spinach and cook until wilted, about 3 minutes. Remove from heat and stir in the dill, parsley, salt, pepper, and feta cheese. Brush a muffin tin with melted butter. Lay out a sheet of phyllo pastry and brush with melted butter.   • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Greek yogurt
  • 1 cucumber, peeled, seeded, and diced

  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Preheat oven to 375°F. In a large bowl, mix the ground lamb, breadcrumbs, mint, parsley, onion, egg, olive oil, salt, and pepper until well combined. Roll into 1-inch meatballs and place on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until cooked through. In a small bowl, mix the Greek yogurt, cucumber, dill, garlic, lemon juice, salt, and pepper until well combined. Serve the meatballs with the tzatziki sauce on the side.

  • 12 oz. halloumi cheese, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon fresh oregano leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preheat grill to medium-high heat. Thread the halloumi cheese, bell peppers, and red onion onto skewers, alternating the ingredients.
