Vegan Moussaka

Ingredients

  • 1 cup unsweetened almond milk
  • 1/4 cup nutritional yeast

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place eggplant slices in a single layer on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until tender. Set aside.
  3. In a large pan over medium heat, add olive oil and sauté onions until soft.
  4. Add garlic and cook for 1-2 minutes, or until fragrant.
  5. Add diced tomatoes, tomato paste, oregano, cinnamon, paprika, salt, and vegetable broth. Stir and simmer for 10-15 minutes.
  6. Add lentils to the tomato sauce and cook for 5-7 minutes.
