Ingredients:
- 1 lb. ground lamb
- 1 eggplant, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp. tomato paste
- 1/2 cup red wine
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1 tsp. dried oregano
- 1 cup chopped tomatoes
- 1/2 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 2 cups béchamel sauce
Instructions:
- Preheat the oven to 350°F. Place sliced eggplant onto a baking sheet and sprinkle with salt; let sit for 30 minutes to release excess moisture. Rinse eggplant and pat dry.
- Meanwhile, brown ground lamb in a large skillet over medium heat. Add onions and garlic and cook until softened. Stir in tomato paste, red wine, cinnamon, nutmeg, oregano, and chopped tomatoes. Simmer for 10 minutes.
