As delicious as it is, traditional Spanakopita is not vegan-friendly as it contains eggs and butter. But with a few tweaks, we have come up with a vegan version that is just as tasty and satisfying. This spinach and feta pie recipe is easy to make and perfect for a cozy night in or to impress your dinner guests. So, let’s get cooking!
Ingredients
- 1 pound spinach, washed and chopped
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/2 cup nutritional yeast
- 1 block firm tofu, drained and crumbled
- 1/2 cup unsweetened almond milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 1 cup vegan feta cheese, crumbled
- 1/2 cup sliced black olives
- 1/4 cup chopped fresh dill
- 12 sheets phyllo dough, thawed and at room temperature
- 1/4 cup olive oil
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add chopped spinach and cook until wilted, about 3-5 minutes. Set aside to cool.
- In a mixing bowl, combine the crumbled tofu, nutritional yeast, almond milk, salt, black pepper, and lemon juice.
- Add the cooled spinach mixture to the tofu mixture and stir to combine.
- Add vegan feta cheese, black olives, and fresh dill to the mixture and stir again.
- Brush a 9-inch pie dish with olive oil.
- Place one sheet of phyllo dough on the bottom of the dish, letting the edges hang over the sides. Brush with olive oil.
- Repeat with six more sheets of phyllo dough, brushing each layer with olive oil.
- Add the filling to the dish, spreading it evenly.
- Take the overhanging edges of the phyllo dough and fold them over the filling to cover the top, brushing each layer with olive oil.
- Bake for 45-50 minutes or until the top is golden brown.
- Serve hot and enjoy your delicious vegan Spanakopita!
