  • 1/2 cup ⁣grated Parmesan ​cheese
  • Extra-virgin olive oil
  • Salt and ‌pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Place the eggplant slices on a baking sheet,⁤ brush with‍ olive oil, ‍and sprinkle with salt and pepper.⁣ Bake⁢ for 20-25 minutes, until tender​ and slightly browned. Set aside.
  3. In a large⁢ skillet, ‍brown the‌ ground beef‌ or lamb⁣ over medium-high ‌heat. Add the onion and garlic and cook until softened, about 5 minutes.
  4. Stir in the ⁤diced tomatoes, wine, ⁢tomato paste, oregano,​ basil, cinnamon,⁣ nutmeg, and salt and pepper to taste. Bring ⁢to​ a simmer and cook for 10-15 minutes, stirring occasionally.
  5. In a separate saucepan, melt the butter⁣ over medium heat.⁣ Add the flour and whisk​ until smooth. Gradually add⁣ the milk, whisking constantly, until‍ the ⁤mixture ⁢is⁢ thick and bubbly. Remove from heat.
  6. Add a bit‍ of the milk mixture⁤ to the ‌beaten eggs, whisking constantly, to temper the‌ eggs. Gradually add the egg⁣ mixture to ‍the remaining milk mixture, whisking ​constantly.
  7. Place a layer of the cooked‍ eggplant slices in the bottom⁢ of a 9×13-inch baking dish. Top with ​a layer of ⁣the meat mixture.‍ Repeat layers, ending with meat ‌mixture.
  8. Pour the béchamel sauce evenly over the ‍meat mixture.⁢ Sprinkle with Parmesan cheese.
  9. Bake for⁢ 45-50 minutes,‍ or until the top is golden brown. Let cool for⁣ a⁤ few minutes ‌before serving.
