Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix together garlic powder, dried oregano, dried basil, onion powder, salt, and black pepper.
- Season sliced chicken with the spice mixture.
- In a large skillet over medium-high heat, heat olive oil. Add chicken and cook until browned on both sides, about 5 minutes per side.
- Transfer chicken to a large baking dish
- In the same skillet over medium heat, add red bell pepper, yellow bell pepper, and red onion. Cook until softened, about 5 minutes.
- Add kalamata olives and cherry tomatoes to the skillet and stir to combine.
- Pour the pepper and olive mixture over the chicken in the baking dish.
- Sprinkle the crumbled feta cheese over the top of the chicken and vegetables.
- Bake in the preheated oven for 20 to 25 minutes or until the chicken is cooked through and the cheese is golden brown.
- Sprinkle chopped parsley over the top before serving.
