Mediterranean Lunch

Ingredients:

  • 1 cup quinoa, rinsed
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa and a pinch of salt, and reduce heat to a simmer. Cover and cook for 18-20 minutes, or until the quinoa is tender and the water is absorbed.
  2. In a large bowl, combine the cooked quinoa, red onion, red bell pepper, cucumber, cherry tomatoes, Kalamata olives, crumbled feta cheese, and chopped parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper.
  4. Pour the dressing over the quinoa mixture and toss until well coated. Serve immediately or chill until ready to eat.
