Greek-Inspired Lunch Recipe

Ingredients

  • 4 pita breads
  • 2 cups of hummus
  • 1 large cucumber
  • 1 large tomato
  • 1 small red onion
  • 1 cup of feta cheese
  • 1/2 cup of olives
  • 1 lemon
  • 1/4 cup of olive oil
  • 1 tbsp of dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the cucumber, tomato, and red onion into small cubes. Set aside.
  3. Brush the pita breads with olive oil and sprinkle with salt, pepper, and oregano. Bake in the oven for 5 minutes.
  4. Spread a generous amount of hummus on each pita bread, leaving a small border around the edges.
  5. Top the hummus with the cucumber, tomato, and red onion cubes, feta cheese, and olives.
  6. Squeeze lemon juice over the top of the toppings and sprinkle with salt and pepper.
  7. Bake in the oven for an additional 5-10 minutes, until the feta cheese is slightly browned and the pitas are crispy.
