Ingredients:
- 1 lb. fresh spinach, washed and trimmed
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 12 sheets phyllo dough, thawed
- 1/4 cup olive oil
Directions:
- Preheat the oven to 375°F.
- Bring a large pot of water to a boil. Add the spinach and cook for 2-3 minutes, or until wilted. Drain and rinse the spinach under cold water. Squeeze out as much water as possible and chop the spinach.
- In a large bowl, combine the spinach, feta cheese, green onions, garlic, parsley, salt, and pepper.
- On a parchment-lined baking sheet, lay down one sheet of phyllo dough. Brush the sheet with olive oil. Repeat with 6 more sheets, brushing each with olive oil.
- Spread the spinach mixture over the layered phyllo dough, leaving a 1-inch border around the edges.
- Layer the remaining 5 sheets of phyllo dough, brushing each with olive oil.
- Fold the edges of the bottom layer of phyllo dough over the spinach filling and brush with olive oil.
- Bake the spanakopita for 35-40 minutes, or until golden brown. Allow to cool for a few minutes before slicing and serving.
