- 60 vine leaves
- 1½ cup long-grain white rice

- Heat half a cup of olive oil in a pan over medium-low heat.Add the onion, and cook until translucent.

- Take a vine leaf, with shiny side down. On the coarse stem end,place about a teaspoonful of your mixture and fold the sides of the leaf towards the center,then roll it tightly to form a small cylinder. Repeat until all leaves are filled.
- Place a few leftover leafs on the bottom of a large heavy pan. Arrange your stuffed leaves seam side down, packing them close together in layers.
- Pour the remaining olive oil,lemon juice,and hot water over the Dolmades covering them fully. Place a heat-proof plate on top of them to keep them submerged.
- Cover the pan, bring the liquid to a boil over medium high heat, before reducing to a simmer for approximately 50-60 minutes or until the rice is cooked through.
- Allow the Dolmades to cool in the pot before removing them gently with a slotted spoon. Serve warm or at room temperature.
