Greek food is known ⁤for its bold flavors and hearty ingredients, but it can also⁣ be a great choice for vegans. ‌In this ⁣recipe, we’re putting a ⁤vegan spin on a classic⁤ Greek dish that is sure to satisfy your cravings.

Spanakopita (Greek Spinach ‌Pie) – Vegan‌ Style

This dish traditionally contains feta cheese and eggs,‌ but we’ll be using tofu and nutritional ‍yeast as a substitute to achieve​ the ⁤same rich flavor.

Ingredients:

  1. 1/2⁢ cup ​olive oil
  2. 1 ‍large onion, finely chopped
  3. 2 garlic ⁢cloves, minced
  4. 2​ scallions, chopped (white and light green parts only)
  5. 1/2 cup fresh parsley, chopped
  6. 1/2 cup fresh dill, ‌chopped
  7. 1/2 cup nutritional yeast
  8. 1 block of tofu, drained ⁣and crumbled
  9. 1/2 tsp salt
  10. 1/4⁣ tsp black pepper
  11. 1 lb fresh ⁤spinach, ⁣washed and‍ chopped
  12. 1 ⁤package of phyllo ‍dough
  13. 1/2 cup ​melted⁣ vegan butter

Instructions:

  1. Preheat oven to 375°F.
  2. In a large skillet, heat up olive oil⁤ over medium-high heat and⁣ sauté onions ​until golden brown, around 10 minutes.
  3. Add garlic, scallions, parsley, and dill. Stir and cook for an additional 3 ⁤minutes.
  4. Add nutritional yeast ‍to the ⁣skillet and stir for 2 minutes.
  5. Add crumbled ‍tofu, salt, and pepper.‍ Sauté for an additional 5⁣ minutes, stirring occasionally.
  6. Add spinach to the skillet and cook for an additional 5‌ minutes, or until the spinach‍ has wilted and released all of its moisture.
  7. Remove skillet‍ from heat and let it cool for⁢ 10​ minutes.
  8. While the skillet is cooling, prepare the phyllo ​dough according‌ to package instructions.
  9. Brush each sheet‌ of ‍phyllo dough with melted vegan butter ‍and place them at the bottom of a baking dish. Leave some overhang on the ‍sides.
  10. Spread⁢ the tofu‌ and ⁣spinach mixture evenly over ‌the phyllo ‌dough.
  11. Place another sheet⁣ of phyllo dough over‍ the tofu and spinach mixture and brush with melted⁢ vegan butter.
  12. Repeat this until all of the phyllo dough‌ is ‌used up.
  13. Brush the top layer ⁤of phyllo⁢ dough with‍ melted‌ vegan ​butter.
  14. Bake in the‍ oven for around ⁢45‌ minutes, or until the phyllo dough ‍is golden brown.
  15. Remove from the oven and let it cool for a few ⁢minutes before serving.
