Greek food is known for its bold flavors and hearty ingredients, but it can also be a great choice for vegans. In this recipe, we’re putting a vegan spin on a classic Greek dish that is sure to satisfy your cravings.
Spanakopita (Greek Spinach Pie) – Vegan Style
This dish traditionally contains feta cheese and eggs, but we’ll be using tofu and nutritional yeast as a substitute to achieve the same rich flavor.
Ingredients:
- 1/2 cup olive oil
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 2 scallions, chopped (white and light green parts only)
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh dill, chopped
- 1/2 cup nutritional yeast
- 1 block of tofu, drained and crumbled
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb fresh spinach, washed and chopped
- 1 package of phyllo dough
- 1/2 cup melted vegan butter
Instructions:
- Preheat oven to 375°F.
- In a large skillet, heat up olive oil over medium-high heat and sauté onions until golden brown, around 10 minutes.
- Add garlic, scallions, parsley, and dill. Stir and cook for an additional 3 minutes.
- Add nutritional yeast to the skillet and stir for 2 minutes.
- Add crumbled tofu, salt, and pepper. Sauté for an additional 5 minutes, stirring occasionally.
- Add spinach to the skillet and cook for an additional 5 minutes, or until the spinach has wilted and released all of its moisture.
- Remove skillet from heat and let it cool for 10 minutes.
- While the skillet is cooling, prepare the phyllo dough according to package instructions.
- Brush each sheet of phyllo dough with melted vegan butter and place them at the bottom of a baking dish. Leave some overhang on the sides.
- Spread the tofu and spinach mixture evenly over the phyllo dough.
- Place another sheet of phyllo dough over the tofu and spinach mixture and brush with melted vegan butter.
- Repeat this until all of the phyllo dough is used up.
- Brush the top layer of phyllo dough with melted vegan butter.
- Bake in the oven for around 45 minutes, or until the phyllo dough is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
