Ingredients

  • 1 block of firm tofu, drained and pressed
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons dried oregano
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1/4 cup vegan yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon zest
  • Salt and pepper, to taste
  • Pita bread, for serving

Instructions

  1. Cut tofu into cubes and place in a large bowl.
  2. In a separate bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper until well-combined.
  3. Pour the marinade over the tofu and toss to coat. Let sit for at least 30 minutes, or up to 4 hours in the fridge.
  4. Thread the marinated tofu, red onion, red bell pepper, yellow bell pepper, and zucchini onto skewers.
  5. Heat a grill or grill pan over medium-high heat. Grill the skewers for 6-8 minutes, rotating occasionally, until the vegetables are tender and the tofu is slightly charred.
  6. In a small bowl, mix together vegan yogurt, dill, lemon zest, salt, and pepper.
  7. Serve the souvlaki skewers with warm pita bread and the yogurt sauce on the side.
