Greek Salad with Grilled Chicken and Pita Bread

This recipe serves 4.

  • 2 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 head romaine lettuce, chopped
  • 1 cucumber, peeled and chopped
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1/2 cup sliced kalamata olives
  • 4 pita bread rounds, toasted and cut into wedges
  • 1/2 cup crumbled feta cheese

Instructions:

  1. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  2. Preheat a grill or grill pan to medium-high heat. Season the chicken with salt and pepper and grill for 4-5 minutes per side, until cooked through. Let cool for a few minutes and then slice into strips.
