  • 1/4 cup fresh parsley, chopped
  • 2 eggs, beaten

  • 1/4 tsp black pepper
  • 10 sheets phyllo dough
  • 1/4 cup olive oil

Instructions:

  1. Preheat oven to 375°F.
  2. In a large bowl, combine the spinach, feta cheese, green onions, dill, parsley, eggs, salt, and black pepper.
  3. Place a sheet of phyllo dough on a work surface and brush with olive oil. Repeat with 4 more sheets, brushing each layer with olive oil.
  4. Spread the spinach mixture evenly over the phyllo dough.
  5. Top with another sheet of phyllo dough, brushing with olive oil. Repeat with 4 more sheets, again brushing each layer with olive oil.
  6. Bake for 30-35 minutes, or until golden brown.
  7. Serve warm.

  3. Pour the egg mixture into the skillet and cook until set, about 5 minutes.
  4. Using a spatula, fold the omelette in half and serve.
