- 4 Filo pastry sheets
- 200g feta cheese
- 100g Ricotta cheese
- 2 tablespoons Greek honey
- 50g Unsalted butter, melted
- Icing sugar, to dust
- Cinnamon, to dust
- For Greek Coffee
- 2 cups Water
- 2 tablespoons Greek coffee
- 2 teaspoons Sugar (optional)

- For Bougatsa: Preheat your oven to 180°C. Crumble the feta cheese and ricotta in a bowl, mixing them together. Lay one sheet of filo on your work surface and brush with a little of the melted butter.
- Spread some of the cheese filling along the short end of the filo sheet,roll it up to encase the cheese,then coil into a snail shape. Place this on a baking tray. Repeat with the remaining sheets,then brush the tops with the remaining butter.
- Bake for about 20 minutes, or until golden brown and crisp. Once out of the oven, drizzle the pastries with honey and dust with icing sugar and cinnamon before serving.
- For greek Coffee: Put the water in a briki or small saucepan. Add the coffee and sugar, and heat over low heat until it starts to froth – this should take about 4 minutes. As soon as the froth has risen up to the top of the briki, remove from the heat.
- Pour the coffee carefully into cups, so the maximum amount of froth is transferred onto the top of each one.Serve hot with the bougatsa.
